If you are throwing a Halloween Party this October or need a fun, healthy treat to send to school with the kids, try out this healthy alternative to typical sugar-filled Halloween treats. This treat is filled with not-so-scary real food ingredients, but are just as delicious!
Peanut Butter Cups
Enjoy – Dark Chocolate Peanut Butter Cups
¼ cup peanut butter (no sugar added)
3 tbsp coconut oil, melted, divided
1 tsp vanilla
1 cups dark chocolate chips
Stir peanut butter, 2 tbsp coconut oil and vanilla together until smooth.
Melt chocolate chips and remaining 1 tbsp coconut oil in a double boiler over low heat until smooth, stirring occasionally.
Line a mini muffin pan with paper liners. Pour about 1 tsp of chocolate into the bottom of each liner. Freeze for 10 minutes until chocolate is hardened.
Spoon about 1 tsp of peanut butter on top of hardened chocolate and place in freezer for about 10 minutes. Store in the refrigerator.
